Coconut Apple Bircher

Apple, coconut & cardamom bircher with apricots. This is the ideal breakfast for warmer months, something refreshing and cool when the weather is hot. And apricots and cardamom are always a winning combination.

INGREDIENTS:

Serves 2 -but worth doubling up to keep in the fridge to see you through the week.

120g oats

1/2 tsp ground cardamom

1 tbsp chia seeds 

200ml coconut milk 

100ml yogurt (any)

1 large apple, grated

Juice of half a lemon 

1 tbsp maple syrup/ honey/ agave - to taste 

Roasted apricots or any seasonal fruits to serve. Plums or apples are also delicious.

 

METHOD:

Mix all the bircher ingredients apart from the maple syrup together and leave overnight. Taste and add the syrup if you want, might be sweet enough. 

Top with roasted apricots (halve and cook at 180 for 20-30 minutes with lemon & vanilla) add honey if you want but I like to keep them quite tart. Or top with any other compote or fresh berries. Also great topped with nuts and seeds too.
